Cáis Dubh

Cáis Dubh (‘Black Cheese’) takes its name from the distinctive black wax coating protecting the cheese. Frank tells the story that when the cheese was being developed, he had a conversation with a Japanese food expert. He told him that in Japan, certain types of clear coating, sometimes used on gouda-style cheeses, had question marks over them from a health point of view. Not wanting to risk excluding a potential market, Frank looked for an alternative coating. Killing two birds with one stone, he chose a black coating on the basis that nobody would ever ask, ‘Can you eat the rind?’

Some time later he received an enquiry about the new cheese from a potential customer. The customer referred in particular to the ‘black-coloured one’ and asked what the name was. Put somewhat on the spot, as it had not occurred to him to give the cheese a name until that point, Frank said, ‘Oh, that’s Cáis Dubh,’ and so the name was born.

Under the rind, the pate is a creamy yellow, darkening slightly towards the edge and pocked liberally with small to medium-sized gas holes. There is a slightly gamey nose and the palate has well-balanced acidity, with a salty/sweet taste and a delicate finish.
